1/2 cup almond flour

1/4 cup chia seeds

1/2 cup sugar (or coconut sugar)

1 tsp baking powder

1/2 cup unsweetened applesauce

1/4 cup milk (dairy or plant-based)

1/4 cup vegetable oil or melted coconut oil

1 tsp vanilla extract

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, almond flour, chia seeds, sugar, baking powder, baking soda, and salt. Whisk until well combined.

      Prepare Wet Ingredients: In a separate bowl, mix together the applesauce, milk, vegetable oil, vanilla extract, and lemon zest (if using). Stir until fully combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently stir using a spatula or wooden spoon until just combined. Be careful not to overmix; some lumps are okay.

          Fold in Blueberries: Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter.
