Ingredients

2 large eggs

1 cup milk

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon

2 tablespoons melted butter

2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1 tablespoon lemon juice

2 tablespoons brown sugar

1 teaspoon vanilla extract

Whipped cream or maple syrup, for serving

Optional: powdered sugar for dusting

Instructions

Prepare the Apple Filling: In a large bowl, mix the diced apples with lemon juice, brown sugar, and cinnamon. Set aside to marinate for about 10 minutes.

Make the Waffle Batter: In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract until well combined. In a separate bowl, blend the flour, sugar, baking powder, salt, and a pinch of cinnamon.

Combine Batter Ingredients: Gradually add the dry ingredients into the wet mixture, stirring until just combined. It's okay if the batter is slightly lumpy; do not overmix.

Preheat Waffle Maker: Preheat your waffle iron according to the manufacturer's instructions. Lightly grease it with cooking spray or a bit of melted butter.

Cook the Waffles: Pour a ladleful of batter onto the center of the preheated waffle iron. Close the lid and cook according to the machine’s instructions (usually about 3-5 minutes) until golden brown. Remove the waffle carefully and repeat with the remaining batter, keeping the finished waffles warm in a low oven.

Assemble the Roll-Ups: For each waffle, place a spoonful of the marinated apple filling in the center and then roll it up like a burrito.

Serving: Plate the waffle roll-ups and serve warm with whipped cream or a drizzle of maple syrup. Dust with powdered sugar for extra sweetness if desired!
