Sweet and Spicy Orange Chicken

For the Chicken:

1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup cornstarch

2 large eggs

1/2 cup vegetable oil (for frying)

For the Sweet and Spicy Sauce:

Zest of 1 orange

1/2 cup fresh orange juice

1/4 cup soy sauce (low sodium preferred)

1/4 cup honey

2 tablespoons rice vinegar

1 tablespoon sriracha (adjust for spice preference)

1 tablespoon minced garlic

1 tablespoon minced ginger

1 teaspoon sesame oil

1 teaspoon red chili flakes (optional, for extra heat)

2 teaspoons cornstarch mixed with 2 tablespoons water (for thickening)

For Garnish:

Sliced green onions

Toasted sesame seeds

Orange slices

Prepare the Chicken: In one bowl, whisk the eggs. In another bowl, place the cornstarch. Dip each piece of chicken first into the eggs and then coat it with cornstarch, shaking off any excess.

    Fry the Chicken: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the coated chicken pieces in batches, frying until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.

      Make the Sauce: In a medium saucepan, combine orange zest, orange juice, soy sauce, honey, rice vinegar, sriracha, minced garlic, minced ginger, and sesame oil. Heat over medium heat until it starts to simmer.

        Thicken the Sauce: After the sauce simmers, add the mixed cornstarch and water to the saucepan. Stir continuously until the sauce thickens, about 2-3 minutes. If desired, add red chili flakes for extra spiciness.

          Combine Chicken and Sauce: Add the fried chicken to the saucepan and toss to coat evenly with the sweet and spicy sauce.
