Sweet and Sour Chicken Skewers

1 lb (450g) boneless chicken breasts, cut into 1-inch cubes

1 large red bell pepper, cut into 1-inch pieces

1 large yellow bell pepper, cut into 1-inch pieces

1 medium red onion, cut into wedges

1 cup pineapple cubes (fresh or canned, drained)

1/4 cup soy sauce

1/4 cup rice vinegar

1/4 cup honey

2 tablespoons ketchup

2 tablespoons cornstarch

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon grated fresh ginger

Salt and pepper to taste

Skewers (wooden or metal, soaked in water if using wooden skewers)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, rice vinegar, honey, ketchup, sesame oil, garlic, ginger, salt, and pepper. Mix well, then add the chicken cubes. Toss to coat, cover, and let marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

    Prepare the Skewers: Preheat your grill or grill pan over medium-high heat. If using wooden skewers, ensure they have soaked in water for at least 30 minutes to prevent burning.

      Assemble the Skewers: Thread the marinated chicken, bell peppers, onion wedges, and pineapple cubes onto the skewers, alternating between ingredients for a colorful presentation. Leave a little space between each piece for even cooking.

        Make the Sweet and Sour Sauce: In a small saucepan, combine the leftover marinade (from step 1, but make sure it's not the raw chicken marinade) and add cornstarch. Bring to a simmer over medium heat, stirring constantly until the sauce thickens (about 3-5 minutes). Remove from the heat and set aside.

          Grill the Skewers: Place the skewers on the preheated grill. Cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and slightly charred, with an internal temperature of 165°F (74°C).

            Glaze and Serve: In the last couple of minutes of grilling, brush the sweet and sour sauce onto the skewers. Remove from the grill and let rest for a few minutes. Serve warm, garnished with fresh herbs if desired, alongside extra sweet and sour sauce for dipping.
