Summer Corn Zucchini Tacos

Ingredients
  

2 medium zucchinis, diced

1 cup fresh corn kernels (about 2 ears of corn)

1 red bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon chili powder (adjust to taste)

Salt and pepper, to taste

1 tablespoon olive oil

8 small corn tortillas

1 avocado, sliced

Fresh cilantro, for garnish

Lime wedges, for serving

Crumbled queso fresco or feta cheese (optional)

Instructions
 

Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add the diced onion, bell pepper, and zucchini. Sauté for about 5 minutes, until the vegetables begin to soften.

    Add Corn and Spices: Stir in the corn kernels, minced garlic, cumin, smoked paprika, chili powder, salt, and pepper. Cook for another 5-7 minutes until the corn is tender and slightly caramelized, stirring occasionally.

      Warm the Tortillas: In a separate cast-iron skillet or on a grill, lightly warm the corn tortillas over medium heat for about 30 seconds on each side. Keep them covered with a clean towel to stay warm.

        Assemble the Tacos: Place a generous spoonful of the vegetable mixture onto each tortilla. Top with sliced avocado and sprinkle with crumbled queso fresco or feta cheese, if desired.

          Garnish and Serve: Finish with fresh cilantro and serve with lime wedges on the side for squeezing over the tacos.
