Summer Berry and Peach Cheesecake Recipe

Crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

Filling:

16 oz cream cheese, softened

¾ cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup sour cream

2 ripe peaches, peeled and diced

1 cup mixed berries (strawberries, blueberries, raspberries)

Topping:

1 cup mixed berries (for garnish)

1 peach, sliced thinly

Mint leaves (for garnish)

Optional: powdered sugar for dusting

Preheat the Oven: Preheat your oven to 325°F (160°C) and lightly grease a 9-inch springform pan.

    Make the Crust: In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press this mixture firmly into the bottom of the prepared springform pan to form an even crust. Bake in the preheated oven for about 10 minutes, then remove and let it cool.

      Prepare the Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add in the granulated sugar and vanilla extract, mixing until well combined.

        Add the Eggs: Add the eggs one at a time, mixing well after each addition. Then, stir in the sour cream until the mixture is smooth and creamy.

          Incorporate the Fruits: Gently fold in the diced peaches and mixed berries into the cheesecake batter. Pour the filling over the cooled crust, spreading it evenly.

            Bake the Cheesecake: Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for about 1 hour to prevent cracking.

              Chill the Cheesecake: After it has cooled, refrigerate the cheesecake for at least 4 hours, or overnight for best results.
