12 large portobello or cremini mushrooms

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup finely chopped fresh parsley

2 cloves garlic, minced

1 small onion, finely chopped

1/2 teaspoon dried thyme

1/4 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

Olive oil for drizzling

Prepare the Mushrooms: Preheat your oven to 375°F (190°C). Gently clean the mushrooms with a damp cloth. Remove the stems, finely chop them and set aside.

    Sauté the Fillings: In a skillet over medium heat, add a drizzle of olive oil. Once heated, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and chopped mushroom stems, cooking for another 2-3 minutes until the mixture is fragrant. Season with thyme, red pepper flakes, salt, and pepper.

      Mix the Filling: In a mixing bowl, combine the sautéed mushroom mixture with the cream cheese, Parmesan cheese, breadcrumbs, and chopped parsley. Mix until everything is well blended and creamy.

        Stuff the Mushrooms: Using a spoon, generously fill each mushroom cap with the stuffing mixture, pressing slightly to ensure it holds together.

          Bake: Place the stuffed mushrooms on a baking sheet lined with parchment paper. Drizzle with a little olive oil on top of each mushroom. Bake in the preheated oven for 20-25 minutes or until the tops are golden and crispy.

            Serve: Remove from the oven and let cool slightly. Serve warm as an appetizer or snack, garnished with additional parsley if desired.
