4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1/2 cup ricotta cheese

1/2 cup cream cheese, softened

1/2 cup feta cheese, crumbled

2 cloves garlic, minced

1 tablespoon fresh basil, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon lemon zest

Salt and pepper to taste

1 cup cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon Italian seasoning

1/2 cup chicken broth

Toothpicks or kitchen twine for securing

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Filling: In a mixing bowl, combine the chopped spinach, ricotta cheese, cream cheese, feta cheese, minced garlic, basil, parsley, lemon zest, salt, and pepper. Mix well until the ingredients are fully incorporated.

      Prepare the Chicken: Take each chicken breast and carefully slice a pocket into the side (do not cut all the way through). Season both sides of the chicken breasts with salt, pepper, and Italian seasoning.

        Stuff the Chicken: Spoon generous amounts of the cheese and spinach mixture into each chicken breast pocket. Secure the opening with toothpicks or tie with kitchen twine.

          Sear the Chicken: In an oven-safe skillet, heat the olive oil over medium-high heat. Place the stuffed chicken breasts in the skillet and sear for about 4-5 minutes per side, or until golden brown.

            Add Tomatoes and Broth: Once seared, sprinkle the halved cherry tomatoes around the chicken in the skillet. Pour the chicken broth over the top, ensuring some gets into the bottom of the skillet.

              Bake: Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and juices run clear (internal temperature should reach 165°F / 74°C).

                Rest & Serve: Remove the skillet from the oven and let the chicken rest for 5 minutes before removing the toothpicks or twine. Serve the stuffed chicken with the roasted tomatoes and pan juices for added flavor.
