Stuffed Charcuterie Board Peppers

6 mini sweet bell peppers (any color)

1 cup cream cheese, softened

1/2 cup goat cheese, crumbled

1/2 cup cooked sausage, crumbled (Italian or chorizo works best)

1/2 cup cherry tomatoes, diced

1/4 cup black olives, sliced

1/4 cup walnuts, chopped

1 tablespoon fresh parsley, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Olive oil, for drizzling

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Slice the tops off the mini sweet bell peppers and remove the seeds. Arrange them upright in a baking dish.

      Make the Filling: In a large mixing bowl, combine the softened cream cheese, goat cheese, cooked sausage, diced cherry tomatoes, black olives, walnuts, parsley, garlic powder, smoked paprika, salt, and pepper. Mix until well combined and smooth.
