3 cups fresh strawberries, hulled and sliced

1/4 cup granulated sugar

1 vanilla bean or 1 teaspoon pure vanilla extract

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 pound store-bought or homemade pound cake, cut into 1-inch cubes

1 cup vanilla yogurt (Greek or regular)

Fresh mint leaves, for garnish (optional)

Prepare the Strawberries: In a medium bowl, combine sliced strawberries and granulated sugar. If using a vanilla bean, split it and scrape the seeds into the bowl. Stir gently and let sit for about 30 minutes, allowing the strawberries to macerate and release their juices.

    Whip the Cream: In a large mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla extract. Using an electric mixer, whip on medium-high speed until soft peaks form, about 3-5 minutes. Be careful not to over-whip; the cream should be light and fluffy.

      Layer the Trifle:

        - In a large trifle dish or individual cups, start by layering a spoonful of the macerated strawberries at the bottom.

          - Next, add a layer of pound cake cubes, breaking them if necessary to fit.

            - Spoon over a layer of whipped cream, followed by a layer of vanilla yogurt.

              - Repeat the layers (strawberries, pound cake, whipped cream, yogurt) until the dish is full, finishing with whipped cream on top.

                Chill and Serve: Cover the trifle with plastic wrap and refrigerate for at least 2 hours (or up to overnight) to allow the flavors to meld. When ready to serve, garnish with fresh mint leaves if desired, add a few remaining strawberry slices on top for decoration.
