For the crust and crumble topping:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 large egg yolk

1 teaspoon vanilla extract

For the strawberry filling:

2 cups fresh strawberries, hulled and sliced

¼ cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

For serving:

Whipped cream (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving a little overhang for easy removal later.

    Make the Crust and Crumble Topping: In a medium mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Add the softened butter, egg yolk, and vanilla extract. Mix until the mixture is crumbly and well combined, resembling wet sand.

      Divide the Mixture: Take out about 1 cup of this mixture and set it aside for the crumble topping. Press the remaining mixture evenly into the bottom of the lined baking pan to form the crust. Bake in the preheated oven for about 12-15 minutes, or until lightly golden.

        Prepare the Strawberry Filling: While the crust is baking, in a medium bowl, combine the sliced strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Toss until the strawberries are well coated. Let the mixture sit for about 10 minutes to allow the flavors to meld.

          Assemble the Bars: Once the crust is out of the oven, spoon the strawberry mixture evenly over the baked crust. Then, crumble the reserved 1 cup of the mixture on top of the strawberries, evenly covering the filling.

            Bake Again: Return the baking pan to the oven and bake for an additional 25-30 minutes, or until the crumble topping is golden brown.

              Cool and Cut: Allow the bars to cool in the pan on a wire rack for at least 30 minutes. Once cooled, use the parchment paper overhang to lift them out of the pan. Cut into squares.

                Serve: Serve the Strawberry Shortcake Crumble Bars as is, or with a dollop of whipped cream on top for an extra indulgent treat.
