For the Cake:

1 box of strawberry cake mix

1 cup of water

1/2 cup of vegetable oil

3 large eggs

1 cup of fresh strawberries, hulled and chopped

1 cup of shredded coconut (optional)

1 cup of chopped walnuts or pecans (optional)

For the Cream Cheese Topping:

8 oz cream cheese, softened

1/2 cup of unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1 teaspoon lemon juice (optional)

Instructions
 

Prepare the Oven and Pan:

    Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish.

      Make the Cake Batter:

        In a large mixing bowl, combine the strawberry cake mix, water, vegetable oil, and eggs. Mix on medium speed for about 2 minutes until well blended.

          Add Strawberries:

            Gently fold in the chopped fresh strawberries, shredded coconut, and nuts if using. Stir until evenly distributed throughout the batter.

              Pour the Batter:

                Pour the cake batter into the prepared baking dish, spreading it evenly.

                  Prepare the Cream Cheese Topping:

                    In a separate bowl, beat together the softened cream cheese and butter until creamy. Gradually add the powdered sugar, mixing until smooth. Stir in the vanilla extract and lemon juice if desired.

                      Add the Cream Cheese Topping:

                        Dollop spoonfuls of the cream cheese mixture over the top of the cake batter. Swirl it in slightly with a knife, creating a marbled effect, but do not mix completely.

                          Bake:

                            Place the cake in the preheated oven and bake for about 35-40 minutes, or until a toothpick inserted into the cake comes out clean or with just a few moist crumbs.
