1 cup graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/4 cup granulated sugar

1/3 cup melted butter

1 8-ounce package cream cheese, softened

1/2 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and diced

8 sugar cones or waffle cones

Additional strawberries for topping

Mint leaves for garnish (optional)

Instructions
 

Prepare the Crunch Layer: In a bowl, mix together graham cracker crumbs, shredded coconut, granulated sugar, and melted butter until combined. Spread the mixture on a baking sheet and toast it in the oven at 350°F (175°C) for 8-10 minutes or until lightly golden. Remove and let it cool.

    Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese with powdered sugar until smooth and creamy. In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until combined.

      Assemble the Cones: Start by crumbling some of the toasted crunch mixture in the bottom of each sugar cone. Then, add a generous spoonful of the cheesecake filling on top. Follow with a layer of diced strawberries, and then add a bit more cheesecake filling to fill the cone.

        Top it Off: Sprinkle the remaining toasted crunch mixture on top of each cone. Add additional diced strawberries for garnish.

          Chill and Serve: Place the assembled cones in the refrigerator for about 30 minutes to firm up the filling. Serve chilled and garnish with mint leaves, if desired.
