1 ½ cups strawberries, hulled and quartered

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon cornstarch

1 ½ cups crushed graham crackers

½ cup unsweetened shredded coconut

½ cup unsalted butter, melted

1 cup vanilla ice cream (softened)

½ cup white chocolate chips

Fresh strawberries for garnish (optional)

Instructions
 

Prepare Strawberries: In a medium saucepan over medium heat, combine the quartered strawberries, ½ cup granulated sugar, lemon juice, and cornstarch. Cook for about 7-10 minutes until the strawberries start to break down and the mixture thickens. Remove from heat and let it cool.

    Make the Crunch Base: In a large mixing bowl, combine the crushed graham crackers, shredded coconut, melted butter, and the remaining ½ cup granulated sugar. Mix well until the ingredients are fully incorporated.

      Assemble the Bars: Line an 8x8 inch baking dish with parchment paper. Press half of the graham cracker mixture firmly into the bottom of the dish to form the base layer. Spread the softened vanilla ice cream over the graham cracker layer, smoothing it into an even layer. Pour the strawberry mixture over the ice cream, spreading it evenly.

        Add Topping: Sprinkle the remaining graham cracker mixture over the top of the strawberry layer, gently pressing it down.

          Drizzle White Chocolate: Melt the white chocolate chips in a microwave-safe bowl in 30-second increments until smooth. Drizzle the melted white chocolate over the top of the bars.

            Chill: Cover the dish with plastic wrap and freeze for at least 4 hours or until firm.

              Serve: Once fully chilled, remove the bars from the dish using the parchment paper. Cut into squares and garnish with fresh strawberries, if desired.
