Ingredients

2 lbs chicken drumsticks

1/2 cup sweet chili sauce

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons rice vinegar

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon cornstarch (optional, for thickening)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Prepare the Chicken: Rinse the chicken drumsticks under cold water and pat them dry with paper towels. Set them aside in a large bowl.

Make the Marinade: In a medium bowl, whisk together the sweet chili sauce, soy sauce, honey, rice vinegar, minced garlic, grated ginger, sesame oil, and red pepper flakes. If you prefer a thicker sauce, mix cornstarch with a tablespoon of cold water and add it to the marinade.

Marinate the Chicken: Pour the marinade over the chicken drumsticks, ensuring they are well coated. Cover the bowl with plastic wrap or transfer everything into a resealable plastic bag. Marinate in the refrigerator for at least 1 hour (best if marinated overnight).

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with aluminum foil for easy cleanup and place a wire rack on top.

Bake the Drumsticks: Remove the drumsticks from the marinade, allowing any excess sauce to drip off. Place the drumsticks on the wire rack. Bake in the preheated oven for 35-40 minutes, turning them halfway through, until they are crispy and cooked through (internal temperature should reach 165°F or 74°C).

Garnish and Serve: Once cooked, remove the drumsticks from the oven and drizzle some of the remaining marinade over them for extra flavor. Garnish with sliced green onions and sesame seeds. Serve hot with steamed rice or your favorite side dish.
