1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple, diced (or canned pineapple, drained)

1/4 cup soy sauce (low sodium preferred)

1/4 cup brown sugar

2 tbsp honey

1 tbsp rice vinegar

1 tbsp cornstarch mixed with 2 tbsp water (to thicken)

2 cloves garlic, minced

1 tsp fresh ginger, grated

1 tbsp sesame oil

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small red onion, sliced

1/4 cup green onions, chopped (for garnish)

2 tbsp sesame seeds (for garnish)

Cooked rice or cauliflower rice (for serving)

Instructions
 

Prepare the Sauce: In a small bowl, combine the soy sauce, brown sugar, honey, rice vinegar, garlic, and ginger. Mix until well combined and set aside.

    Cook the Chicken: Heat the sesame oil in a large skillet over medium heat. Add the chicken pieces and cook until golden brown and fully cooked, about 5-7 minutes. Stir occasionally to ensure even cooking.

      Add Vegetables: Once the chicken is browned, add the sliced red and green bell peppers and red onion to the skillet. Sauté for an additional 3-4 minutes until the vegetables are tender but still crisp.
