4 bone-in, skin-on chicken thighs

1/4 cup soy sauce

1/4 cup honey

2 tablespoons fresh ginger, grated

3 garlic cloves, minced

1 tablespoon rice vinegar

1 tablespoon sesame oil

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional for heat)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, honey, grated ginger, minced garlic, rice vinegar, sesame oil, black pepper, and red pepper flakes (if using). Whisk together until smooth. Add the chicken thighs, ensuring they are well coated in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes, or up to overnight for more flavor.

    Preheat the Oven: Preheat your oven to 425°F (220°C).

      Bake the Chicken: Remove the chicken from the marinade and place it in a baking dish, skin-side up. Pour about half of the remaining marinade over the chicken thighs. Reserve the rest for later baste.

        Bake: Bake in the preheated oven for 25 minutes. Then, baste the chicken with the reserved marinade and continue baking for another 10-15 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the skin is crispy.
