1 lb (450g) fresh cremini or button mushrooms, cleaned and stems trimmed

4 tablespoons unsalted butter

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

1 teaspoon fresh parsley, chopped (plus extra for garnish)

1 tablespoon soy sauce

½ teaspoon black pepper

¼ teaspoon sea salt (adjust to taste)

1 tablespoon balsamic vinegar (optional for depth of flavor)

Prepare the Mushrooms: In a large skillet, over medium heat, melt 2 tablespoons of the butter. Once the butter is sizzling, add the mushrooms. Make sure they lay in a single layer for even cooking. Sauté for about 5-7 minutes until they are golden brown and tender, stirring occasionally.
