12 oz fettuccine pasta

1 lb sirloin steak, trimmed and cut into strips

2 tablespoons olive oil

Salt and pepper to taste

4 cloves garlic, minced

1 cup heavy cream

1 cup Gorgonzola cheese, crumbled

3/4 cup grated Parmesan cheese

1/2 cup chicken or vegetable broth

2 tablespoons unsalted butter

1 tablespoon fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Prepare the Steak: Season the sirloin strips generously with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the steak and cook for about 3-4 minutes, flipping halfway through, until browned and cooked to your desired doneness. Remove the steak from the skillet and set it aside.

      Make the Alfredo Sauce: In the same skillet, lower the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Carefully pour in the heavy cream and stir, bringing it to a simmer.

        Add the Cheeses: Gradually whisk in the Gorgonzola and Parmesan cheeses until melted and creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency. Add the chicken or vegetable broth and mix well.
