Ingredients

8 oz rice noodles

1 cup peanut butter (smooth or crunchy)

1/4 cup soy sauce (low-sodium recommended)

2 tablespoons lime juice (freshly squeezed)

2 tablespoons sriracha sauce (adjust based on heat preference)

2 tablespoons honey or maple syrup

1 tablespoon sesame oil

2 cloves garlic (minced)

1/2 teaspoon ginger (freshly grated)

1 red bell pepper (sliced thin)

1 carrot (julienned)

1 cup snap peas (trimmed)

1/4 cup green onions (chopped)

1/4 cup roasted peanuts (chopped, for garnish)

Fresh cilantro (for garnish)

Instructions

Cook the Noodles: Bring a pot of water to boil. Add the rice noodles and cook according to package instructions (usually about 4-6 minutes). Once cooked, drain and rinse under cold water. Set aside.

Make the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, sriracha, honey (or maple syrup), sesame oil, minced garlic, and grated ginger until smooth and creamy. You may need to adjust the thickness by adding a little warm water if necessary.

Sauté the Vegetables: In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the sliced red bell pepper, julienned carrot, and snap peas. Stir-fry for about 3-4 minutes until just tender but still crisp.

Combine Ingredients: Add the cooked rice noodles to the skillet with the sautéed vegetables. Pour the peanut sauce over the noodles and toss everything together until evenly coated. Cook for an additional 2-3 minutes, allowing the noodles to absorb the flavors.

Serve: Transfer the noodles to serving plates or bowls. Garnish with chopped green onions, roasted peanuts, and fresh cilantro for an extra burst of flavor and color.

Enjoy: Serve immediately while warm and enjoy your spicy Thai peanut noodles!
