1 tablespoon coconut oil

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

2 tablespoons red curry paste (adjust for spice level)

4 cups coconut milk (full-fat for creaminess)

4 cups vegetable broth (or chicken broth)

1 tablespoon soy sauce (or tamari for gluten-free)

2 tablespoons brown sugar

1 bell pepper, sliced (red or yellow)

1 cup snap peas or green beans, trimmed

1 cup mushrooms, sliced (shiitake or cremini)

1 cup cherry tomatoes, halved

1 cup cooked protein of choice (tofu, chicken, shrimp)

Juice of 1 lime

Fresh cilantro, for garnish

Sliced red chili and lime wedges, for serving

Sauté Aromatics: In a large pot, heat coconut oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the garlic and ginger, cooking for another minute until fragrant.

    Add Curry Paste: Stir in the red curry paste, cooking for an additional 2 minutes until well combined and aromatic.

      Combine Liquids: Pour in the coconut milk and vegetable broth, whisking thoroughly to blend. Bring the mixture to a gentle simmer.
