2 cups fresh blueberries

1/2 cup granulated sugar (or honey, for a healthier version)

1 cup coconut water

1 tablespoon lime juice (freshly squeezed)

1-2 teaspoons chili powder (adjust based on heat preference)

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Blueberries: Rinse the blueberries under cold water and pat dry. Reserve a few for garnish if desired.

    Blend the Mixture: In a blender, combine the blueberries, sugar (or honey), coconut water, lime juice, chili powder, and salt. Blend until smooth and all ingredients are well incorporated. Taste the mixture and adjust the sweetness or chili level as needed.

      Strain (Optional): For a smoother texture, you can strain the mixture through a fine mesh sieve to remove the skins. This is optional depending on your preference for texture.

        Fill Popsicle Molds: Pour the blended mixture into popsicle molds, leaving a little room at the top as the mixture will expand when frozen. If you're using reserved blueberries, drop them into the molds for a fun surprise when you bite into the popsicle.
