Ingredients

For the Pork:

2 pounds boneless pork shoulder

1 tablespoon olive oil

1 tablespoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1 cup chicken broth

1 cup pineapple juice

For the BBQ Sauce:

1 cup your favorite BBQ sauce

1/2 cup canned crushed pineapple, drained

1 tablespoon soy sauce

1 tablespoon apple cider vinegar

1 teaspoon sriracha (or more for extra heat)

1 tablespoon brown sugar (optional, for additional sweetness)

For the Sliders:

12 small slider buns

1 cup coleslaw mix

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

Salt and pepper to taste

Fresh cilantro leaves for garnish (optional)

Instructions

Prepare the Pork:

    - In a large bowl, combine smoked paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture all over the pork shoulder.

      - In a large skillet, heat olive oil over medium-high heat. Sear the pork shoulder on all sides until browned (about 3-4 minutes per side).

        - Transfer the browned pork to a slow cooker. Pour the chicken broth and pineapple juice over the pork. Cover and cook on low for 8 hours or high for 4 hours, until the pork is tender and easily shredded.

          Make the BBQ Sauce:

            - In a medium bowl, whisk together the BBQ sauce, crushed pineapple, soy sauce, apple cider vinegar, sriracha, and brown sugar (if using). Adjust the seasoning and heat level to your liking.

              Shred and Mix:

                - Once the pork is cooked, remove it from the slow cooker and shred it with two forks. Mix the shredded pork with the BBQ sauce until well-coated.

                  Prepare the Coleslaw:

                    - In a separate bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, salt, and pepper. Toss to combine and adjust seasoning as needed.

                      Assemble the Sliders:

                        - Slice the slider buns in half. On the bottom half of each bun, layer a generous amount of the BBQ pork followed by a spoonful of coleslaw. Top with the other half of the bun.

                          Serve:

                            - Arrange the sliders on a platter. Garnish with fresh cilantro leaves if desired. Serve with extra BBQ sauce on the side for dipping!
