1 large head of cauliflower, cut into florets

3 tablespoons vegetable oil

1/4 cup gochujang (Korean red chili paste)

2 tablespoons soy sauce

2 tablespoons rice vinegar

1 tablespoon maple syrup (or honey)

1 tablespoon sesame oil

2 cloves garlic, minced

1 inch piece of ginger, grated

1 tablespoon sesame seeds (for garnish)

3 green onions, chopped (for garnish)

1 tablespoon toasted nori strips (optional, for garnish)

Instructions
 

Preheat your oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the sauce: In a mixing bowl, whisk together the gochujang, soy sauce, rice vinegar, maple syrup, sesame oil, minced garlic, and grated ginger until fully combined. Adjust the spiciness to your preference by adding more gochujang if desired.

      Coat the cauliflower: In a large mixing bowl, toss the cauliflower florets with the vegetable oil until evenly coated. Then pour the prepared sauce over the cauliflower. Make sure each floret is well-coated for maximum flavor.
