1.5 lbs (680g) chicken thighs, boneless and skinless

2 tablespoons gochujang (Korean chili paste)

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sesame oil

4 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon rice vinegar

1 tablespoon vegetable oil

1 teaspoon black pepper

1 tablespoon cornstarch (for a crispy coating)

2 green onions, sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the gochujang, soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and black pepper. Mix well until all ingredients are thoroughly combined.

    Coat the Chicken: Cut the chicken thighs into bite-sized pieces and add them to the marinade. Make sure each piece is well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

      Prepare for Cooking: After marination, add cornstarch to the marinated chicken and toss to coat the pieces evenly. This will create a crispy texture when cooked.

        Heat the Oil: In a large skillet or wok, heat the vegetable oil over medium-high heat. Allow it to get hot until shimmering but not smoking.

          Cook the Chicken: Add the marinated chicken pieces in a single layer (you may need to do this in batches to avoid overcrowding). Cook for about 5-7 minutes on one side until golden brown and crispy, then flip and cook for another 5 minutes until cooked through and caramelized.

            Garnish and Serve: Once cooked, remove the chicken from the pan and transfer to a serving platter. Garnish with sliced green onions and a sprinkle of sesame seeds.
