1 pound (450g) boneless, skinless chicken thighs

2 tablespoons gochujang (Korean chili paste)

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 tablespoon rice vinegar

2 cloves garlic, minced

1-inch piece of ginger, grated

1 teaspoon black pepper

1 tablespoon vegetable oil (for cooking)

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Optional: Sliced cucumber or lettuce leaves (for serving)

Instructions
 

Marinate the Chicken: In a medium-sized bowl, combine gochujang, soy sauce, honey, sesame oil, rice vinegar, minced garlic, grated ginger, and black pepper. Whisk until well blended. Add the chicken thighs to the bowl, ensuring they are fully coated with the marinade. Cover and refrigerate for at least 30 minutes, preferably 2 hours for deeper flavor.

    Prepare the Cooking Surface: Heat a large skillet or frying pan over medium-high heat. Add vegetable oil and let it shimmer.

      Cook the Chicken: Once the skillet is hot, add the marinated chicken thighs (reserve leftover marinade for later). Cook for about 5-7 minutes on one side, allowing a nice sear to develop.
