Spicy BBQ Chicken & Ranch Tortilla Bake

2 cups cooked shredded chicken

1 cup spicy BBQ sauce

1 cup ranch dressing

2 cups shredded cheddar cheese

6 large flour tortillas

1 cup black beans, drained and rinsed

1 cup frozen corn, thawed

1/2 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare Chicken Mixture: In a large bowl, combine the shredded chicken, spicy BBQ sauce, ranch dressing, garlic powder, smoked paprika, cayenne pepper, salt, and pepper. Mix well until the chicken is evenly coated.

      Layering the Bake: In a 9x13 inch baking dish, spread a thin layer of the chicken mixture on the bottom. Lay down 2 tortillas, covering the bottom of the dish.

        Add Ingredients: On top of the tortillas, layer half of the remaining chicken mixture, followed by half of the black beans, half of the corn, and a third of the cheddar cheese.

          Repeat Layers: Place another 2 tortillas on top of this layer. Repeat the process with the remaining chicken mixture, black beans, corn, and another third of the cheddar cheese.

            Final Layer: Top with the last 2 tortillas, then spread the remaining barbecue chicken mixture on top. Sprinkle the remaining cheddar cheese and green onions evenly over everything.

              Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown.

                Cool and Serve: Let the bake cool for 5-10 minutes before slicing. Garnish with freshly chopped cilantro if desired. Serve warm and enjoy!
