Spaghetti & Spinach with Sun-Dried Tomato Cream Sauce

Ingredients
  

8 oz spaghetti

2 tbsp olive oil

4 cloves garlic, minced

5 oz fresh spinach (about 5 cups loosely packed)

1/2 cup sun-dried tomatoes, chopped (preferably in oil)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil or parsley for garnish (optional)

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.

    Sauté the Garlic: In the same pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant (be careful not to burn it).

      Add Spinach: Stir in the fresh spinach, cooking until it wilts down, which should take about 2-3 minutes.

        Incorporate Sun-Dried Tomatoes: Add the chopped sun-dried tomatoes to the pot and cook for another 1-2 minutes, allowing the flavors to meld.

          Make the Cream Sauce: Pour in the heavy cream, let it come to a gentle simmer, then stir in the grated Parmesan cheese. Mix until the cheese is melted and the sauce is smooth. If the sauce is too thick, add a bit of reserved pasta water to reach your desired consistency.

            Combine Pasta and Sauce: Toss the cooked spaghetti into the pot with the sun-dried tomato cream sauce. Mix until the pasta is well coated, adding more pasta water if needed.

              Season: Sprinkle with red pepper flakes, salt, and pepper to taste. Stir everything together.

                Serve: Plate the spaghetti, garnishing it with fresh basil or parsley if desired. Serve immediately and enjoy!
