Southwest Chicken Wraps with Avocado Ranch

2 cups cooked chicken breast, shredded

1 tablespoon olive oil

1 tablespoon southwest seasoning (or a mix of paprika, cumin, chili powder, garlic powder, and onion powder)

Salt and pepper to taste

1 cup corn kernels (fresh, canned, or frozen)

1 cup black beans, drained and rinsed

1 red bell pepper, diced

1 small red onion, diced

Fresh cilantro, chopped (for garnish)

For the Avocado Ranch:

1 ripe avocado, pitted and peeled

1/2 cup Greek yogurt (or sour cream)

1/4 cup buttermilk (or milk)

1 tablespoon ranch seasoning mix

1 tablespoon fresh lime juice

Salt and pepper to taste

For Assembly:

4 large flour tortillas (or whole wheat for a healthier option)

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup shredded cheese (cheddar, pepper jack, or a blend)

Lime wedges (for garnish)

Instructions
 

Prepare the Southwest Chicken:

    - In a large skillet, heat olive oil over medium heat. Add the shredded chicken, southwest seasoning, salt, and pepper. Stir to combine and cook for about 5-7 minutes until heated through. Add in the corn, black beans, diced bell pepper, and onion, cooking for another 3-4 minutes until vegetables are slightly tender. Remove from heat.

      Make the Avocado Ranch:

        - In a blender or food processor, combine the avocado, Greek yogurt, buttermilk, ranch seasoning, lime juice, salt, and pepper. Blend until smooth and creamy. Adjust seasoning if necessary, adding more lime juice or salt to taste.

          Assemble the Wraps:

            - Lay a flour tortilla flat on a clean surface. Spread a generous amount of avocado ranch on the tortilla, leaving a border around the edges.

              - Layer on some shredded lettuce, a portion of the southwest chicken mixture, diced tomatoes, and sprinkle on shredded cheese.
