4 chicken thighs (bone-in, skin-on)

2 cups buttermilk

2 cups all-purpose flour

1 tablespoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Oil for frying (vegetable or peanut oil)

For the Waffles:

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 tablespoon sugar

½ teaspoon salt

2 large eggs

1¾ cups buttermilk

½ cup melted butter

1 teaspoon vanilla extract

Maple syrup

Fresh berries (optional)

Powdered sugar (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine the buttermilk, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight for maximum flavor and tenderness.

    Prepare the Flour Coating: In another bowl, mix the flour, paprika, salt, and pepper. Set aside.

      Heat the Oil: In a large cast-iron skillet or a deep frying pan, pour enough oil to fill the pan about 2 inches deep. Heat the oil to 350°F (175°C).

        Coat the Chicken: Remove the chicken from the marinade, allowing excess buttermilk to drip off. Dredge each piece in the seasoned flour, pressing it in to ensure a good coating. Place the coated chicken on a wire rack for 10-15 minutes to let the coating adhere better.

          Fry the Chicken: Carefully place the chicken in the hot oil in batches, ensuring not to overcrowd the pan. Fry for 10-12 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F / 75°C). Use a thermometer to check. Once cooked, transfer to a wire rack lined with paper towels to drain excess oil.

            Make the Waffles: While the chicken is frying, preheat your waffle maker. In a large bowl, whisk together flour, baking powder, baking soda, sugar, and salt. In another bowl, mix the eggs, buttermilk, melted butter, and vanilla. Combine the wet and dry ingredients, stirring until just mixed (some lumps are okay).

              Cook the Waffles: Pour the batter into the preheated waffle maker and cook according to the manufacturer's instructions or until they are golden brown and crisp.

                Serve: On a plate, stack a warm waffle and top it with a piece of fried chicken. Drizzle with maple syrup, add fresh berries if desired, and dust with powdered sugar for an extra touch of sweetness.
