Soft & Moist Pumpkin Bars

1 cup canned pumpkin puree

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1/4 teaspoon ground ginger

1/2 cup chopped walnuts or pecans (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Grease and line a 9x13 inch baking pan with parchment paper for easy removal.

    In a large mixing bowl, combine the pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well combined.

      In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, salt, and ginger. This will ensure even distribution of the dry ingredients.

        Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon until just combined (do not overmix).

          If using, fold in the chopped walnuts or pecans.

            Pour the batter into the prepared baking pan and spread it out evenly.

              Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Remove from the oven and let the bars cool in the pan for about 10 minutes. Then, lift them out using the parchment paper and allow them to cool completely on a wire rack.

                  Once cooled, you can dust the bars with powdered sugar or serve them as is. Cut them into squares or rectangles for serving.
