Ingredients

For the Snickerdoodle Cookie Topping:

1 ½ cups all-purpose flour

1 cup granulated sugar

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

For the Fruit Filling:

4 cups fresh or frozen apples, peeled and sliced

½ cup brown sugar, packed

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

1 tablespoon butter, cut into small pieces for dotting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced apples, brown sugar, ground cinnamon, lemon juice, and cornstarch. Toss until the apples are evenly coated. Spread the apple mixture evenly in the prepared baking dish.

Make the Snickerdoodle Topping: In a separate bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Add the melted butter, egg, and vanilla extract to the dry ingredients. Stir until just combined – be careful not to overmix.

Assemble the Cobbler: Drop spoonfuls of the snickerdoodle batter over the apple filling, leaving some gaps for the apple mixture to peek through. Use a spatula to gently spread and smooth the batter if necessary. Dot the top with small pieces of butter.

Bake the Cobbler: Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Allow the cobbler to cool for about 10-15 minutes before serving. This dish is delightful served warm, optionally topped with vanilla ice cream or whipped cream.
