For the Smothered Chicken:

4 boneless, skinless chicken thighs

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons olive oil

1 onion, thinly sliced

2 cups chicken broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

For the Creamed Spinach:

6 cups fresh spinach, washed and chopped

4 slices bacon, cooked until crispy and crumbled

1 cup heavy cream

1 cup cream cheese, softened

1/4 teaspoon nutmeg

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Instructions
 

Prepare the Chicken:

    - In a bowl, mix the flour, paprika, garlic powder, onion powder, salt, and pepper.

      - Dredge each chicken thigh in the seasoned flour, shaking off any excess.

        Cook the Chicken:

          - In a large skillet, heat the olive oil over medium-high heat. Add the chicken thighs and cook for about 5-7 minutes on each side until golden brown. Remove from the skillet and set aside.

            Make the Gravy:

              - In the same skillet, add sliced onions and sauté until they are translucent, about 5 minutes.

                - Pour in the chicken broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet. Stir in the thyme.

                  - Return the chicken thighs to the skillet, cover, and reduce heat to low. Allow to simmer for about 20 minutes until the chicken is cooked through and tender.

                    Prepare the Creamed Spinach:

                      - In a separate large pan, add the chopped spinach and cook over medium heat until wilted, about 3-4 minutes.

                        - Reduce the heat and stir in the heavy cream and cream cheese. Mix until the cream cheese is fully melted and incorporated.

                          - Season with nutmeg, salt, and pepper. Fold in the crumbled bacon and Parmesan cheese. Cook for an additional 2-3 minutes until heated through and creamy.

                            Serve:

                              - Plate the chicken thighs and generously spoon the onion gravy over them.
