4 to 5 lbs pork roast (shoulder or loin)

1 tablespoon olive oil

3 teaspoons garlic powder

2 teaspoons onion powder

2 teaspoons dried thyme

2 teaspoons dried rosemary

2 teaspoons dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

1 large onion, sliced

4 cloves garlic, minced

1 cup chicken broth

2 tablespoons balsamic vinegar

2 tablespoons honey (optional, for sweetness)

Fresh herbs for garnish (such as thyme or parsley)

Instructions
 

Prepare the Pork: Pat the pork roast dry with paper towels. This helps the seasoning stick and promotes better browning. Season it generously with salt and pepper on all sides.

    Create the Herb Mixture: In a small bowl, combine the garlic powder, onion powder, thyme, rosemary, oregano, smoked paprika, salt, and pepper. Rub this mixture all over the pork roast, ensuring it's evenly coated.

      Sear the Roast (Optional): In a large skillet, heat olive oil over medium-high heat. Once hot, add the pork roast and sear it on all sides until golden brown (about 3-4 minutes per side). This step adds extra flavor to the pork but can be skipped if short on time.

        Prepare the Slow Cooker: Place the sliced onion and minced garlic at the bottom of the slow cooker. If you skipped the searing step, just add the raw pork directly on top of the onions.

          Add Liquid: Pour the chicken broth, balsamic vinegar, and honey (if using) over the pork roast. This will create a flavorful cooking liquid and help keep the meat moist.

            Cook the Roast: Cover the slow cooker with its lid and set it to low heat. Cook for 8-10 hours or on high heat for 4-6 hours until the pork is tender and easily pulls apart with a fork.

              Check Doneness: The internal temperature of the pork should reach 145°F (63°C). If you prefer shredding, you can cook it longer until it’s fork-tender.

                Shred (If Desired): Once cooked, remove the roast from the slow cooker and let it rest for about 10 minutes. You can slice or shred it based on your preference.
