2 lbs beef sirloin or chuck, cut into 1-inch cubes

1 lb baby potatoes, halved

1 cup beef broth

1/2 cup unsalted butter (1 stick)

10 cloves garlic, minced

1 medium onion, diced

2 teaspoons Italian seasoning

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Beef: Season the beef cubes generously with salt and pepper. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Sear the beef cubes in batches until browned on all sides, about 2-3 minutes per side. Transfer the beef to the slow cooker.

    Sauté Aromatics: In the same skillet, add the remaining butter. Once melted, add the diced onion and cook until translucent (about 3-4 minutes). Stir in the minced garlic, Italian seasoning, and smoked paprika; cook for an additional minute until fragrant.

      Combine in Slow Cooker: Pour the sautéed onion and garlic mixture over the seared beef in the slow cooker. Add the halved baby potatoes and pour in the beef broth. Give everything a gentle stir to combine.

        Cook: Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender and the potatoes are fork-tender.

          Finish and Serve: Once cooked, taste and adjust seasoning if necessary. Garnish with fresh chopped parsley. Serve hot, and enjoy the savory garlic butter flavors!
