Ingredients

2-3 lbs beef chuck roast

1 tablespoon olive oil

1 large onion, sliced

3-4 cloves garlic, minced

2 cups beef broth

1 cup water

1 tablespoon Worcestershire sauce

1 teaspoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4-6 hoagie rolls or French rolls

Provolone or Swiss cheese slices (optional)

Fresh parsley for garnish (optional)

Instructions

Prep the Roast: Season the beef chuck roast generously with salt and pepper on all sides.

Sear the Beef: In a large skillet, heat olive oil over medium-high heat. Add the roast and sear for about 4-5 minutes on each side until browned. This step enhances the flavor.

Combine Ingredients in Slow Cooker: Transfer the seared roast to the slow cooker. Add the sliced onions and minced garlic over the top of the roast.

Make the Broth Mixture: In a bowl, combine the beef broth, water, Worcestershire sauce, soy sauce, thyme, and rosemary. Pour this mixture into the slow cooker, ensuring that the roast is submerged as much as possible.

Cook: Cover and set your slow cooker to low for 8 hours or high for 4-5 hours, until the meat is tender and easily shredded with a fork.

Shred the Beef: Once cooked, remove the roast from the slow cooker and shred it with two forks. Return the shredded beef to the slow cooker, mixing it with the juices.

Prepare the Rolls: If using, place cheese slices on the hoagie rolls and toast in the oven until melted.

Assemble the Sandwiches: Load each roll with the shredded beef mixture and drizzle some extra juices from the slow cooker over the top.

Serve: Garnish with fresh parsley if desired. Serve with small bowls of the cooking liquid as au jus for dipping.
