Slow Cooker Chili

1 pound ground beef (or turkey for a leaner option)

1 large onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

2 tablespoons tomato paste

1 cup beef broth (or vegetable broth)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon oregano

½ teaspoon cayenne pepper (optional, for heat)

Salt and pepper to taste

1 cup corn kernels (fresh, frozen, or canned)

Fresh cilantro, sour cream, and shredded cheese for serving (optional)

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef (or turkey) until fully cooked. Drain excess fat if necessary and transfer the meat to the slow cooker.

    Sauté the Veggies: In the same skillet, add diced onion, garlic, and bell pepper. Sauté for about 5-7 minutes until the veggies are softened. Add them to the slow cooker.

      Combine Ingredients: To the slow cooker, add the kidney beans, black beans, diced tomatoes (with juices), tomato paste, beef broth, chili powder, cumin, smoked paprika, oregano, cayenne pepper, corn, and a generous pinch of salt and pepper. Stir to mix everything evenly.

        Cook: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours. The longer it cooks, the more the flavors will meld together.

          Final Taste Check: Once done, taste the chili and adjust seasonings as necessary. If it’s too thick, you can stir in some additional broth or water.

            Serve: Ladle the chili into bowls and top with fresh cilantro, a dollop of sour cream, and shredded cheese if desired. Serve hot with cornbread or tortilla chips on the side for a complete meal.
