Slow Cooker Chicken Tacos

2 lbs boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 jar (16 oz) salsa (mild or spicy based on preference)

1 packet taco seasoning

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

Juice of 1 lime

Salt and pepper to taste

Flour or corn tortillas, for serving

Toppings: diced avocado, shredded lettuce, chopped cilantro, sour cream, and shredded cheese

Instructions
 

Place the chicken breasts at the bottom of the slow cooker.

    In a mixing bowl, combine the black beans, corn, salsa, taco seasoning, onion, garlic, bell pepper, lime juice, salt, and pepper.

      Pour the bean and salsa mixture over the chicken in the slow cooker, ensuring the chicken is well-covered.

        Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and easily shreds with a fork.

          Once cooked, shred the chicken directly in the slow cooker using two forks, mixing it with the other ingredients.

            Taste and adjust seasoning if necessary.

              Serve the chicken mixture in warm tortillas, and top with your favorite toppings such as avocado, lettuce, cilantro, sour cream, and cheese.
