Ingredients

2 lbs boneless, skinless chicken thighs, cut into bite-sized pieces

4 medium carrots, sliced

3 stalks celery, chopped

1 medium onion, diced

3 cloves garlic, minced

4 medium potatoes, diced (Yukon Gold or Russet)

1 cup green peas (fresh or frozen)

4 cups chicken broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons olive oil

2 tablespoons Worcestershire sauce

1 bouquet garni (a bundle of herbs, typically including parsley, bay leaf, and thyme)

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Ingredients: Start by cleaning and chopping all the vegetables and chicken. Make sure the chicken is in uniform bite-sized pieces to ensure even cooking.

Sauté Aromatics (Optional): In a skillet, heat the olive oil over medium heat. Add the diced onions and minced garlic, sautéing until fragrant and the onions become translucent (about 3-4 minutes). This step enhances the flavor but can be skipped if you prefer to add everything directly to the slow cooker.

Layer the Ingredients in the Slow Cooker: In the slow cooker, add the chicken pieces, sliced carrots, chopped celery, diced potatoes, and green peas. If you sautéed the onions and garlic, add them now.

Add Seasoning and Liquid: Pour in the chicken broth, Worcestershire sauce, and sprinkle in the thyme, rosemary, paprika, salt, and pepper. Nestle the bouquet garni into the stew for flavor infusion.

Cook: Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours, depending on your schedule. The long, slow cooking process will allow the flavors to meld beautifully.

Final Touches: About 30 minutes before serving, taste the stew and adjust seasoning if necessary. Remove the bouquet garni before serving.

Serve: Ladle the hearty stew into bowls and garnish with fresh parsley. Serve with crusty bread or over cooked rice for a complete meal.

                Prep Time: 15 minutes | Total Time: 7-8 hours | Servings: 6-8
