Slow Cooker Beef Stroganoff – Creamy & Hearty!

2 lbs beef chuck roast, cut into 1-inch cubes

1 medium onion, chopped

3 cloves garlic, minced

8 oz mushrooms, sliced (button or cremini)

1 teaspoon dried thyme

1 teaspoon paprika

2 cups beef broth

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

1 cup sour cream

2 tablespoons all-purpose flour (optional, for thickening)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

12 oz egg noodles (for serving)

Prepare the Beef: In a large bowl, season the beef cubes generously with salt and pepper. Optionally, you can coat the beef in flour to enhance browning and create a thicker sauce later.

    Sauté Aromatics: In a skillet over medium heat, add a splash of oil and sauté the chopped onion until translucent, about 3-4 minutes. Stir in the minced garlic and sliced mushrooms, cooking for an additional 3-5 minutes until mushrooms are tender.

      Combine in Slow Cooker: Transfer the beef cubes to the slow cooker. Add the sautéed onions, garlic, and mushrooms on top of the beef.

        Add Seasonings: Sprinkle the dried thyme and paprika over the mixture. Pour in the beef broth, Worcestershire sauce, and soy sauce. Stir to combine all the ingredients evenly.

          Cook: Cover and set the slow cooker on low for 7-8 hours, or on high for 4-5 hours, until the beef is tender and easily shreds with a fork.

            Finish with Creaminess: About 30 minutes before serving, stir in the sour cream. If you would like a thicker sauce, you can mix the flour with a little bit of water to make a slurry and add it at this time, stirring well.

              Cook Noodles: While the stroganoff finishes, prepare the egg noodles according to package instructions. Drain and set aside.

                Serve: Once the stroganoff is cooked, taste for seasoning and adjust if necessary. Serve the beef stroganoff over the cooked egg noodles and garnish with freshly chopped parsley.
