2 pounds beef chuck roast, cut into 1-inch cubes

1 medium onion, finely chopped

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

2 cups beef broth

1 tablespoon Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper, to taste

1 cup sour cream

2 tablespoons all-purpose flour

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

12 ounces egg noodles (to serve)

Brown the Beef: In a large skillet, heat olive oil over medium-high heat. Add the cubed beef and season with salt and pepper. Brown the beef on all sides (about 4-5 minutes). This step enhances the flavor of the stroganoff.

    Prepare the Slow Cooker: Transfer the browned beef into the slow cooker. Add the chopped onion, minced garlic, and sliced mushrooms.

      Add Seasonings & Liquids: Pour in the beef broth and Worcestershire sauce. Add the dried thyme, paprika, and additional salt and pepper to taste. Stir to combine all ingredients.

        Cook: Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender.

          Add Sour Cream: About 30 minutes before serving, mix the sour cream with flour in a small bowl. Stir this mixture into the slow cooker, combining well. This will thicken the sauce and add creaminess.

            Prepare Noodles: While the stroganoff is thickening, cook the egg noodles according to package instructions. Drain and set aside.
