12 oz. pasta (such as fusilli or penne)

1 lb. large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1/4 teaspoon red pepper flakes (adjust to taste)

1 cup cherry tomatoes, halved

1/2 cup white wine (or chicken broth)

1 tablespoon lemon juice

1 teaspoon lemon zest

1/2 cup fresh parsley, chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1 teaspoon Italian seasoning

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 3-quart baking dish with non-stick spray or olive oil.

    Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions. Drain and set aside.

      Sauté the Shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant. Add the shrimp, season with salt, pepper, and Italian seasoning. Cook for about 3-4 minutes or until the shrimp turn pink and opaque. Remove from heat.

        Combine Ingredients: In a large bowl, combine the cooked pasta, sautéed shrimp, cherry tomatoes, white wine, lemon juice, lemon zest, and half of the parsley. Gently mix until everything is well-coated.

          Transfer to Baking Dish: Transfer the mixture into the prepared baking dish. Sprinkle the top with shredded mozzarella and Parmesan cheese evenly.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
