Ingredients

2 duck breasts

1 teaspoon salt

1 teaspoon ground black pepper

1 teaspoon smoked paprika

1 cup chicken stock

2 tablespoons olive oil

1 medium red onion, finely diced

2 cloves garlic, minced

1 tablespoon fresh lime juice

8 small corn tortillas

1 cup fresh cilantro, chopped

1 avocado, sliced

1 cup radishes, thinly sliced

1 cup crumbled queso fresco

Hot sauce, to taste

Instructions

Prepare the Duck:

    - Score the skin of the duck breasts in a crosshatch pattern, ensuring you don't cut into the meat. This will help render the fat and crisp up the skin.

      - Season both sides with salt, black pepper, and smoked paprika.

        Cook the Duck:

          - In a skillet, heat the olive oil over medium heat. Place the duck breasts skin-side down and cook for about 6-8 minutes, or until the skin is crispy and golden brown. Flip and cook for an additional 3-4 minutes.

            - Remove the duck from the skillet and set aside to rest.

              Sauté Aromatics:

                - In the same skillet, add the diced red onion and minced garlic. Sauté for about 3-4 minutes until the onions are softened and translucent.

                  Shred the Duck:

                    - After the duck has rested for about 10 minutes, use two forks to shred the meat into bite-sized pieces. Discard any excess fat.

                      Combine:

                        - Add the shredded duck back into the skillet with the sautéed onions and garlic. Pour in the chicken stock and fresh lime juice. Stir to combine, then let simmer for about 10 minutes, allowing the flavors to meld and the liquid to reduce slightly.

                          Warm the Tortillas:

                            - While the duck is simmering, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.

                              Assemble the Tacos:

                                - Place a generous amount of the shredded duck mixture onto each tortilla. Top with fresh cilantro, sliced avocado, radishes, and crumbled queso fresco. Drizzle with hot sauce to taste.

                                  Serve:

                                    - Serve the tacos warm with extra lime wedges on the side for squeezing, and enjoy the deliciously unique flavors!
