Ingredients
  

1 pre-made 9-inch pie crust

1 cup all-purpose flour

1 cup packed brown sugar

1/2 cup granulated sugar

1 teaspoon baking soda

1/2 teaspoon salt

1 cup boiling water

1/3 cup unsulfured molasses

1 large egg, beaten

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 cup butter, melted (for topping)

1/4 cup flour (for topping)

1/4 cup brown sugar (for topping)

1/2 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a bowl, combine 1 cup flour, 1 cup brown sugar, 1/2 cup granulated sugar, 1 teaspoon baking soda, and 1/2 teaspoon salt. Mix well.

      In a separate bowl, mix together the boiling water and molasses, stirring until well combined.

        Add the beaten egg and vanilla extract to the molasses mixture and whisk until smooth.

          Gradually pour the wet mixture into the dry ingredients, stirring until just combined.

            Pour the filling into the pre-made pie crust and set aside.

              In another bowl, create the crumb topping by combining 1/4 cup melted butter, 1/4 cup flour, 1/4 cup brown sugar, and 1/2 teaspoon cinnamon. Mix until crumbly.

                Sprinkle the crumb topping evenly over the filling in the pie crust.

                  Bake for 30-35 minutes, or until the center is set and the top is golden brown.

                    Allow the pie to cool for at least 10 minutes before serving. Slice and enjoy the sweet, sticky goodness!
