1 lb (450g) beef stew meat, cut into bite-sized pieces

1 lb (450g) smoked sausage, sliced

1 medium onion, chopped

2 cloves garlic, minced

4 medium potatoes, diced

3 carrots, sliced

2 stalks celery, chopped

1 can (14.5 oz) diced tomatoes, with juices

4 cups beef broth

1 cup frozen corn

1 cup green beans, trimmed and cut

2 tsp dried thyme

1 tsp paprika

1 tsp black pepper

2 bay leaves

Salt, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the beef stew meat and brown on all sides, about 5-7 minutes. Remove and set aside.

    In the same pot, add the sliced sausage and cook until lightly browned, about 3-4 minutes. Remove and set aside with the beef.

      Add the chopped onion and garlic to the pot, sautéing until softened, about 3 minutes.

        Stir in the diced potatoes, sliced carrots, and chopped celery, cooking for another 5 minutes.

          Return the browned meat and sausage to the pot. Add the canned tomatoes, beef broth, frozen corn, green beans, thyme, paprika, black pepper, and bay leaves. Mix well.

            Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for about 1 hour, stirring occasionally, until the vegetables are tender and the flavors meld.

              Taste and add salt as needed. Remove bay leaves before serving.

                Ladle the stew into bowls, garnish with fresh parsley, and enjoy!
