4 salmon fillets (about 6 oz each)

1 large lemon (zested and juiced)

4 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 pound asparagus, trimmed

1 pint cherry tomatoes, halved

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). Line a large sheet pan with parchment paper for easier cleanup.

    Prepare the Marinade: In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, olive oil, oregano, salt, and black pepper.

      Marinate the Salmon: Place the salmon fillets in a shallow dish and pour half of the marinade over them. Allow the salmon to marinate for at least 15 minutes while you prepare the veggies.

        Prepare the Veggies: In a large bowl, add the trimmed asparagus and halved cherry tomatoes. Drizzle with the remaining marinade and toss to coat.

          Arrange on the Sheet Pan: Lay the marinated salmon fillets in the center of the sheet pan. Arrange the asparagus and cherry tomatoes around the salmon.

            Bake: Place the sheet pan in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.

              Garnish & Serve: Once cooked, remove the sheet pan from the oven and sprinkle chopped parsley over the dish. Serve immediately with fresh lemon wedges on the side for an extra citrusy kick.
