1 lb breakfast sausage, casings removed

1 can (16.3 oz) refrigerated flaky biscuits

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1 small onion, diced

1 red bell pepper, diced

1 cup spinach, chopped (optional for added greens)

1 tsp garlic powder

½ tsp onion powder

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

    Cook the Sausage: In a large skillet over medium heat, add the breakfast sausage. Using a spatula, break it up into smaller pieces as it cooks. Add the diced onion and bell pepper, sautéing until the sausage is browned and the vegetables are soft, about 5-7 minutes. If using, stir in the spinach until wilted. Drain any excess grease.

      Prepare the Biscuit Base: Open the can of biscuit dough and cut each biscuit into quarters. Layer the biscuit pieces evenly across the bottom of the prepared baking dish.

        Mix the Egg Mixture: In a medium bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until well combined.
