Savory Ground Beef Potato Hash Bake

1 pound ground beef

3 medium russet potatoes, diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup frozen corn

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper, to taste

1 cup shredded cheddar cheese

4 large eggs

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Beef: In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef and cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if needed.

      Add Vegetables: Stir in the chopped onion, garlic, and diced bell pepper to the skillet. Sauté until the vegetables are soft, about 5 minutes.

        Season: Add the diced potatoes, smoked paprika, ground cumin, salt, and pepper. Mix well to combine. Cover the skillet and cook for about 10-15 minutes, stirring occasionally, until the potatoes are tender.

          Mix in Corn: Fold in the frozen corn and half of the shredded cheese. Cook for an additional 2-3 minutes, until heated through.

            Prepare for Baking: Transfer the beef and potato mixture to a greased 9x13 inch baking dish. Make four wells in the mixture with the back of a spoon.

              Add Eggs: Crack an egg into each of the wells you created. Sprinkle the remaining cheese over the top of the hash mixture.

                Bake: Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the eggs are set to your desired consistency (less baking for runny eggs, longer for firm).

                  Garnish and Serve: Remove the hash bake from the oven, let it cool for a few minutes, and garnish with fresh chopped parsley. Serve hot and enjoy!
