1 lb (450g) large shrimp, peeled and deveined

3 cups cooked jasmine rice (preferably day-old)

4 cloves garlic, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce

2 tablespoons sesame oil

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, finely chopped

2 large eggs, beaten

Salt and pepper to taste

Fresh cilantro for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare the Shrimp: Rinse the shrimp under cold water and pat them dry with paper towels. Season with a pinch of salt and pepper.

    Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and are fully cooked. Remove the shrimp from the skillet and set aside.

      Sauté Garlic and Vegetables: In the same skillet, add the remaining tablespoon of sesame oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, toss in the mixed vegetables and stir-fry for about 2-3 minutes until they are tender.

        Add Rice: Increase the heat to high and add the cooked rice to the skillet. Break up any clumps with a spatula, making sure it mixes well with the vegetables.

          Season the Rice: Pour the soy sauce and oyster sauce over the rice, mixing well to ensure even distribution of the sauces.

            Incorporate Shrimp and Eggs: Push the rice to one side of the skillet. On the other side, add the beaten eggs and scramble until fully cooked. Once the eggs are ready, mix them into the rice along with the cooked shrimp.

              Finish with Green Onions: Stir in the chopped green onions and taste the fried rice. Adjust the seasoning with more salt, pepper, or soy sauce if needed.

                Serve: Remove the skillet from heat. Garnish the fried rice with fresh cilantro if desired and serve with lime wedges on the side for a zesty kick.
