2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon garlic powder (optional)

1 cup cold unsalted butter, cut into cubes

1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar)

1 tablespoon fresh chives, finely chopped (or herbs of choice)

1 cup shredded cheese (cheddar, gouda, or your favorite)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and garlic powder until well combined.

      Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs with pea-sized chunks of butter remaining.

        Stir in the fresh chives and shredded cheese until evenly distributed.

          Make a well in the center of the mixture and pour in the buttermilk. Stir gently with a fork until just combined. Be careful not to overmix; the dough should be slightly sticky.

            Turn the dough out onto a floured surface. Gently pat it into a rectangle about 1 inch thick. Fold the dough over onto itself three times, creating layers for flakiness.

              Use a floured rolling pin to roll the dough to about 1 inch thick again. Cut out biscuits using a floured biscuit cutter (or a glass) without twisting the cutter to maintain the layers.

                Place the cut biscuits on the prepared baking sheet, spacing them about 1 inch apart. Brush the tops with melted butter for a golden finish if desired.

                  Bake for 12-15 minutes, or until the biscuits are golden brown and flaky.

                    Remove from the oven and allow to cool slightly before serving. Enjoy warm with butter, honey, or your favorite spread!
